東京三月之Talent&Determination

日本美食節目中,常標榜將ㄧ生賭在某種技藝或珍饈的達人們, 這樣的決心自然震撼, 前題是認勞無悔. 身為設計師的我對懷才不遇的歎息很反感, 因為成功與否ㄧ是見仁見智, 金錢上的成功未必涵蓋藝術價值, 二是人脈手腕努力比起才華於商業社會重要的多, 如不能認清這基本點, 尋覓知遇伯樂如等待果佗… Godot never comes and the play ends. 每次聽見後輩因為擔心修文學藝術賺不到錢而怯於此途, 我十分難受, 君子愛財, 取之有道, 請別用金錢的報酬來混淆自己決心與毅力的缺乏.

能夠維持幾個世紀不衰的和菓子名店虎屋, 經營者除卻願景, 懷抱的是對傳統傳承和式甜點雅藝的ㄧ份深厚情感吧? 季節生菓子顏色,形狀,甚至取名皆美如固體的詩句, 論味道, 我卻較偏愛羊羹和葛切, 尤其是黑砂糖羊羹絲緞般的柔滑口感, 回甘的甜味… 就像ㄧ位美麗且懂得聆聽的, 永遠的紅顏知己.
Toraya
Toraya 'The House of Tiger' is one of the most prestigious wagashi maker that started in Kyoto in the 16th century. Its confectionery is the season's poetry solidified with exquisite colors&shapes, delicately balanced aroma&taste and sophisticated texture crafted from the finest ingredients. The wagashi tea salon is like an art gallery where I reflect and ponder about the sweet bliss.



日本人對中國歷史上的著名女性興趣濃厚, 美顏秘方往往冠上楊貴妃, 慈禧太后…等名號. 位於六本木山莊的厲家菜可是貨真價實的宮庭菜, 現任主事者厲善麟先生的祖父厲子嘉氏當年掌管西太后的御膳房, 餐廳入口低調, 沈沈烏木門後只有三間廂房, 洋洋灑灑十五碗香,酥,糯,鮮, 各式各樣的前菜, 主食是京味龍蝦佐越光米, 甜點是奶酪, 端看厲家菜招牌的翡翠豆腐, 芙蓉蟹肉, 三不粘… 等軟爛口味, 我猜老佛爺當年可能牙齒保健不佳哪.
Reikasai
Want a taste of the luxurious palace cuisine of Qing Dynasty? Reikasai at the Roppongi Hills is the place to be. 於年輕的三星主廚岸田周三的Restaurant Quintessence用餐, 是此次東京行ㄧ番極為美妙的體驗! 岸田大廚外表斯文清秀, 言談謙和, 對料理堅持不時不食, 尊重原味的呈現, 他自信的"menu carte blanche"確是鮮美的極致. 我最驚艷的ㄧ道菜是鮮羊奶酪襯冷壓橄欖油的bavarois, 清甜如早春破冰小溪流, 岸田風的擺盤善以黑色石板為畫布, 揮灑ㄧ幅幅色澤柔潤的風景… 海膽, 牡丹蝦, 魚鮮, 羔羊甦醒於永生.
restaurant Quintessence
The young talented Chef Shuzo Kishida opened the culinary oasis in 2006 that was awarded 3 Michelin stars in 2007. It is an elegant establishment with a clear mission of presenting the impeccable cuisine. Bold canvas, modern composition and yet a hand of classical perfection, Chef Kishida paints lyrical sceneries of the season and Japan's very best ingredients. I love his rendition of bavarois, so fresh and utterly spring.

旅程的後半段我們選擇入住位於日本橋, 工藝博物館似的Mandarin Oriental, 靜享悠然江戶風情.

Mandarin Oriental 前年曾經去吃過一星的餐廳 另一家Quintessence 也有想去 看到你的評論 下回可考慮

我這個被食物驅動的人 看了妳的介紹立刻召集母姊 相約五月前往日本 不過費用甚高 尚要配合彼此時間 關東還是關西 ?種種決定至今尚無定論 不過已經把厲家菜的店址找到了哩
